Susan's Coconut Cookies (with healthier ingredients)

If you’ve ever worked, been to a social event or celebrated a holiday with me, there’s a good chance you’ve tasted my “famous” coconut cookies. Not only are they my absolute favorite treat, they are super easy to make and always a crowd pleaser. It’s hard to eat just one. In fact, a co-worker once compared my coconut cookies to crack because they are so addictive. That’s because they are loaded with sugar, condensed milk and chocolate.

While this version below, may not be as over the top, they are still delicious and much more healthy! If you are baking for the holidays, give this recipe a try and please let me know what you think!

Susan’s “Healthier” Coconut Cookies

Servings: 12

Ingredients:

  • 2 large egg whites

  • ¼ cup honey (raw honey-not processed)

  • ¼ teaspoon kosher salt

  • 2½ cups unsweetened coconut flakes

  • 1/3 cup dark chocolate chips ( I like to use mini)

  • 1/3 cup chopped almonds-salted or unsalted (optional)

Instructions:

  1. Use a hand blender to whisk egg whites to stiff peaks

  2. Whisk in honey and salt

  3. Stir in coconut flakes

  4. Stir in chocolate chips and almonds

  5. Place bowl in fridge to chill for ½ hour

  6. Scoop about a tablespoon of batter and use hands to shape it into small round shape

  7. Place cookies onto a parchment lined baking sheet

  8. Bake at 350°F for 10-12 minutes, until cookies are golden brown. (I like to overcook mine so they get gooey and crispy)

  9. Cool 1 hour

  10. Serve and hide from anyone else with a sweet tooth :)
