Veggie Matzoh Brei Recipe
Matzoh Brei has been my favorite Passover food since my dad used to make if for me as a child. Eating it now as an adult, it’s equally delicious and it brings back so many holiday memories.
If you’ve never had or heard of Matzoh Brei, it is only 3 ingredients-eggs, matzoh and butter. You make Matzoh Brei by soaking matzoh in egg until it is soft and then frying and scrambling it. It’s so easy I never even follow a recipe. I like to eat it plain, but many people enjoy pairing it with syrup or apple sauce. It’s so popular you can often find it being served at Jewish delis year-round.
While I will still enjoy Matzoh Brie in its traditional form this year, I decided to be creative and added in some more nutrients . Typically, I scramble spinach and other veggies into my eggs, so why not add them into my Matzoh Brie too?!
I loosely based this recipe on something I found online and modified it to meet my preferences and taste. I chose to add spinach, onion and a bit of feta cheese, but you can use other leafy greens such as kale, chopped up peppers or even tomato.
It still has all the great flavor and texture of ordinary Matzah Brie and now includes fiber and protein too! Win win!
Veggie Matzoh Brei Recipe

Ingredients
2 teaspoons olive oil (or avocado oil)
1 large onion, chopped
¼ teaspoon salt
Fresh ground black pepper
10 ounces of fresh spinach or 1(10 ounce) package frozen chopped spinach-thawed and drained)
3 pieces of unsalted matzoh- (regular, whole wheat, gluten free)
6 egg whites and 3 large eggs OR 6 large eggs
1 tablespoon butter
1/3 cup feta cheese or cheese of choice (optional)
Salt and pepper to taste
