Tomato Watermelon Salad

Watermelon is a refreshing treat on its own, but this Tomato and Watermelon salad is my favorite way to enjoy watermelon.

Not only is this salad super tasty and easy to make, the watermelon provides lots of nutrients and health benefits! Each bite of watermelon will help to hydrate you and is loaded with fiber and vitamins A and C. It’s also low in sugar and calories and can help to reduce cravings, weight and belly fat.


Ingredients

  • 1 large seedless watermelon, cut into 1-inch cubes

  • 4 tomatoes, cut into 1-inch dice

  • 12 mint leaves, sliced thinly

  • 1 large sweet onion, thinly sliced

  • 1 cup crumbled feta cheese (optional)

  • ¼ cup olive oil

  • 2 tablespoons white balsamic vinegar

  • 1 pinch Kosher salt

  • 1 pinch ground black pepper

Directions

  • Gently mix watermelon, tomatoes, mint, onion, and feta cheese in a large bowl.

  • Whisk olive oil, vinegar, salt, and pepper together in small bowl; drizzle over salad and gently toss to coat.
